Cooking Plantain

Well here I am in Africa, well away from corporate life in London.  I feel completely relaxed and at home in this village next to Lunghi Airport- so close to the runway you can feel the house vibrate as jets take off in the middle of the night.

I have been invited to help with the cooking – something I cannot wait to try.  Here, I am prepping plantain.  A local crop similar to banana but savory rather than sweet.

For me the abiding smell of Africa is wood smoke – you smell it everywhere from the cooking.  Here with the ancient method of three large stones with wood gradually pushed onto the centre.P1020653.jpg
